Meet Chef Tavares

Michael Moser, general manager of the Hyatt Regency Princeton announced the appointment of Christopher Tavares of Levittown, PA as Executive Chef.  In his new role, Tavares is responsible for Laurea, the hotel’s upscale Italian restaurant and an expansive catering operation servicing one of Central New Jersey’s largest ballrooms.

Prior to joining the Hyatt, Tavares conceptualized and launched Ancient Spirits & Grille in Philadelphia, an Ayurvedic restaurant which personalizes cuisine based on the guest, and for seven years served as executive chef for Davio’s a fine dining steakhouse, also in Philadelphia.

“Chef Chris has a passion for turning meticulously sourced ingredients into elegantly simple, yet memorable dishes,” said Moser.  “At the same time, he has the experience in high volume operations that allows him to present catering clients with both creative and familiar choices to please hundreds of hungry guests simultaneously.  Already, Chris has helped us update and upgrade our dining options to meet the desires of the returning business and leisure travelers.”

“This position is like a dream come true,” said Tavares.  “Princeton is an incredible destination. We have easy access to local farms, and seafood, and we’re halfway between New York and Philadelphia, with the corporate and social clientele who appreciate carefully selected, well-prepared food; both classic and trending.   I’m looking forward to showcasing our Jersey Fresh bounty in new and surprising ways that will establish Laurea as a local dining destination and create memorable events that will make our meeting planners and special event organizers proud.”
