Chef Cardoso was born and raised in Lisbon, Portugal, where he cooked with his grandmother and developed a passion for the culinary arts. He brings to Laurea Restaurant over 21 years of experience from myriad restaurants and luxury hotels, including Alfama Restaurant, The Plaza Hotel, The Ritz Carlton Central Park, The Ritz Carlton Abaco Club at Winding Bay, Abacos, Bahamas, Conrad Tokyo, Hilton Bali resort and, most recently, the ARTRIO Wine Bar / Restaurant, its rooftop bar, Loopy Doopy, and all in-room dining at the Conrad New York.
Chef Cardoso’s Portuguese heritage also wields a strong influence on the flavors of his cuisine: garlic and olive oil remain among his favorite seasonings. With an affinity for the finest quality ingredients, he works his culinary alchemy to produce clean dishes and a refined presentation, in loving alignment with Laurea’s Italian menu.
Chef Cardoso oversees all aspects of culinary at the Hyatt Regency Princeton, including The Market, Laurea, in-room dining, comedy club food operations, and banquet and catering.
